A variety of cocoa products are made from cocoa liquor, including cocoa butter and other chocolate solids. Over the years, demand for cocoa liquor has surged, and producers are working on increasing their production capacity. As compared to cocoa butter, cocoa butter has a lower fat content and is, therefore, less valuable than cocoa butter. Chocolate liquor is one of the most important ingredients in chocolate production because it imparts unique physical properties to chocolate, such as flavor and color.
The global cocoa liquor market is focused on the actual use of products in deserts, ice cream, confectionery and bakery products. The cocoa liquor market accounts for more than 35% of the global cocoa market. Chocolate liquor is even used to manufacture cocoa powder and cocoa butter utilizing pressing operations. The cocoa liquor produced by these companies does not contain any gluten, allergens, and is not made from any genetically modified materials. The cocoa liquor varieties provided by different companies are different, and each variety may vary depending on the region in which the cocoa beans are obtained for production. They are also manufactured using different processes (such as natural cocoa liquor).
The global food and beverage industry’s chocolate products producers are increasingly adopting Dutch production processes. This has affected the demand for Dutch cocoa liquor. Darker in color, consumers are likely to prefer Dutch cocoa liquor than natural cocoa liquor, especially in baking applications. It is projected that almost 630,000 tons of Dutch cocoa liquor were sold in the global market in 2017. Based on the variety of cocoa beans, Forastero and Creolelo are still expected to be in high demand, as cocoa liquors made with these varieties may be more abundant than Trinitario and other cocoa varieties affect consumer taste preferences. Over the forecast period, Trinitario cocoa liquor will proliferate at a compound annual growth rate of 5.2%.
