The most common way to produce decaffeinated coffee is through “solvent extraction.” The beans are soaked in benzene, methylene chloride, or ethyl acetate. There are many ways to make decaffeinated coffee, but the most common method is to use caffeine-removing chemical compounds called chlorogenic acids.
Caffeine can be removed by either an activated carbon filter or steaming the beans until the solubilized caffeine evaporates. This process leaves behind most other flavors, so decaffeinated coffee often tastes watery or bland. The first step in making decaf is to make regular coffee. The process starts with the three types of beans: arabica, robusta, and liberica. Decaffeinated coffee might seem to be an oxymoron, but it exists. Making decaf coffee is complicated, including taking the caffeine out of regular coffee beans, grinding them up, and soaking them in water for hours. With the caffeine out of the beans, they are dried to remove any residual water, which helps to prevent molding. They are also roasted to bring back some of the flavors.
